With just a few simple ingredients, a simple bag of chips or a container of yoghurt can become a fabulously tasty snack of guacamole and chips – just add an avocado!
I know that for some, avocados can be intimidating – you need to get to know them a little better before you figure out the perfect softness and the proper shade of avocado green that indicates the yumminess of a ripe avocado. This recipe is adapted from a recipe a friend taught me. It serves two – unless you are like me, a guacamole addict, and then you may have to double it in order to encourage yourself to share.
Ingredients
1 small container of yoghurt
1 avocado – not hard, but not squishy
1 lime
1 small red onion, finely chopped
1 teaspoon mustard
1 small tomato, chopped small
Salt to taste
Directions
Peel the avocado with a knife and chop up the avocado meat, taking out the pit. Another option would be to simply divide the avocado in half, score out the avocado insides and then scrape them out like you would with a mango.
Immediately sprinkle with lime juice from the lime so the avocado doesn’t brown.
Smash the avocado with a fork.
Add in yoghurt and mix well.
Add in onion, mustard and tomato. Add salt if you need it.
Mix together and chill till serving time!
