Ramadan recipes: Turkish pita for Ramadan

Thanks to our flickr Ramadan Recipes group we have received a number of Ramadan food pictures and recipes to add to our Ramadan Recipe collection. This recipe comes from Glutton Cat.

The bread is called “Ramazan pidesi,” which means “Turkish pita for Ramadan,” and is very popular in Turkey, especially during the month of Ramadan.

Ingredients:
1/4 ounce (7.5g) packet of active dry yeast
2 lb/1 kg flour
1/4 cups warm water
7 tbsp (~50g) butter
1.5 tbsp yogurt
1.5 cups water
Salt
1tsp sugar
1/4 cups cooking oil
1 tbsp black cumin/sesame seeds/poppy seed

Instructions:
1. Dissolve the yeast in warm water. Put the mixture aside for 5-10 minutes until it rises approximately 1cm (approximately half an inch).
2. Melt the butter.
3. Mix the flour, yeast, melted butter, cooking oil, salt and sugar.
4. Add the remaining water slowly and make a dough.
5. Divide the dough into two pieces, and form balls.
6. Cut a deep cross on the surface of each ball. Cover with plastic film, and put aside for half 1 hour.
7. Transfer the dough to a lightly floured surface, and flatten using a rolling pin. The thickness should be about 1/2cm (approximately 1/4 inch).
8. Using a spoon handle, draw a checkered pattern.
9. Beat the yogurt and apply to the surface of the pita.
10. Sprinkle the caraway seeds on top of the pita, and place on a baking sheet/ stone. Cover with plastic film, and put aside for 1 hour.
11. Preheat the oven to 160C/320F.
12. Cook the pita until the surface becomes golden.
13. Cool on a rack.
Hint: If you put some water in the oven while the bread is cooking, it will be softer.
